Because the heraldry device for the Barony of the Angels is a seraphim with gold wings on a red background (the barony is located in the greater Los Angeles area). Since I wanted to paint something to present to the baron and baroness, I chose to use part of the barony's heraldry in the design.
As a general side note, in the SCA, a lit candle represents the scholarly arts and sciences, while the sword is a representation of the three SCA martial arts in general--armored combat, rapier combat, and archery.
