
Avocado & Seafood Salad Toast
First there came "Avocado Toast", and all the memes associated with it. Wuff jumped on that bandwagon a while ago (here: http://www.furaffinity.net/full/23912551/ )
Others have also done wonderful variations of that dish, such as:

Then came a selection of delicious Seafood Salad ideas, and epitomized by

Both these ideas were SOOOOO tasty-looking! Vrghr wondered, "What happens if we pair them up together, like two great tunes in a mash-up?"
So Vrghr did just that this weekend! And *POOF* - - Avocado Toasts taken to the next level.
The results were totally delicious! And you can eat it as a meal, slice it smaller for appetizers, use the leftover toppings as dips for crackers and tortilla chips... Quite a versatile dish!
Not only that, it's totally easy to make! The only cooking comes from toasting the bread. Everything else is just a "mix and refrigerate" technique.
And please, don't forego that toasting step! The toasted flavor and crispy crunch really set off this offering! Both texture and flavor benefit.
Wuff chose a nice French Baguette as his bread, but a sourdough would work nicely too.
Wuff's seafood salad is based on what was readily available at the market (and on sale) that day. But that lovely seafood salad of Yelleena's (linked above) would be equally tasty here, if not more-so!

(Makes at least 6-8 each, 2 sandwich per person servings)
Ingredients:
Avocado-Guacamole
2 ripe Avocados
1 plum Tomato, diced
~1/3 C Cilantro leaves, chopped
2 TBS minced Garlic
Juice of one Lime (or lemon)
Zest of 1/2 Lime (or lemon)
1/8 tsp crushed Red Pepper Flakes
Salt and Pepper to taste
Seafood Salad
1 lb cooked Small Shrimp, peeled & de-veined
1 lb Fake "Lobster" chunks (like imitation Krab, but Lobster flavored)
1/3 C Mayo
1/3 C Miracle Whip (or other brand) Salad Dressing (sweeter than Mayo)
1 TBS Lemon Juice
1 tsp Mustard Powder
1 tsp Smoked Paprika
1/2 tsp Garlic Powder
1/4 tsp ground Black Pepper
1/8 tsp Cayenne Pepper
Salt to Taste
3-5 Buttery Crackers (Townhouse, Ritz, etc), crushed into fine crumbs
Optional: Pinch of Sugar
1 loaf Baguette bread, split lengthwise and cut into serving size portions
Garlic & Herb infused Olive Oil
Directions:
For the Avocado-Guacamole:
Cut the avocados in half, remove the pits, and scoop out the flesh into a small bowl.
Add remaining ingredients except for the Tomatoes, and mash everything together with a fork until relatively smooth (a few chunks are fine!)
Gently stir in the diced tomatoes
Taste and adjust spices, salt and pepper as desired
Cover with cling wrap, pressing gently against the top of the mixture to keep the air off (keeps from discoloring) and refrigerate for a half an hour for flavor to meld
For the Seafood salad:
Thaw the cooked shrimp and drain off the brine. Place shrimp in food processor and pulse a few times to chop them up slightly. Do not over-process into mince! Put processed shrimp into a medium bowl
Put the fake lobster meat into the food processor, pulse as you did for the shrimp, and add to bowl with the shrimp
Add the remaining ingredients, except for cracker crumbs, and stir together
Optional: seafood mix can be added too, if desired
The mixture may get a bit watery as the spices pull moisture from the shrimp and other seafood. Stir in the cracker crumbs to thicken and bind the mixture. They also add a nice flavor component
Taste and adjust salt, pepper, and sweetness (with optional sugar) as desired
Cover and refrigerate while you prepare and toast the bread
Note: Make sure the seafood is pretty thick and not runny. Too much juice will make your toasts soggy
Set the rack to the top of your oven and set the oven to "Broil". Place the sliced bread, cut side up, under the broiler and broil until toasted lightly and golden
Remove bread from oven and drizzle lightly with herb/garlic-infused Olive Oil
Assemble toasts:
Spread a nice layer of the prepared avocado/guacamole on top of the toasted bread slices
Pile a layer of the seafood on top of the layer of the avocado
Garnish lightly with chopped cilantro
Optional: Garnish with some chunks of crispy bacon

Definitely a great mix of flavors. The Avocado adds a lovely bit of richness and earthiness to the lighter, brinier seafood. Wuff likes his shrimp salad with just a wee bit of sweetness to complement the shrimp, so that balances very nicely with the more savory avocado.

Cut the sugar or use sugar substitute in the seafood salad, and this might be okay on a diabetic diet too. A bit high in carbs with the bread, but sub-ing in a "wrap" or some thinner flat bread could cut that back some as well. Then it should be do-able as long as one exercises restraint in portion size. *GRIN*

Hang around wuffy TOO long and Vrghr might have you eatin' that green stuff whether you know it or not! *LAUGHS* Wuff loves it! And likes to sneak it into all sorts of stuff. It is so mild in flavor, and so rich, it can make a great "hidden ingredient" in the most unlikely places, to bring extra creaminess and rich fat to a dish.
