
So here's a low sodium recipe with abour 548mg per one serving of sodium(based on a 2000mg intake/diet). That aside, I wanted to try something different and that could last for 2 people quite a few days. As per usual, I tweaked the recipe a bit and will put the substitutions down at the bottom, but otherwise enjoy.
Ingredients
1 lb lean ground beef
1/2 lb ground pork
1 onion , diced
3 cloves garlic , minced
1 cup tomato sauce
1 can tomato soup
2 tablespoons tomato paste
28 oz . canned diced tomatoes with liquid
1 teaspoon dried dill
3 tablespoons fresh parsley
1 bay leaf
salt & pepper to taste
2 1/2 cups cooked rice (brown or white)
1 tablespoon olive oil
1 head of cabbage, chopped
Note:Instead of the one pound of ground beef and the half pound of pork, I opted to use 2 pounds of lean ground turkey and completely omitted the fresh parsley and it turned out just as well. Also for the rice, I used 2 bags of white rice, the boil in the bag ones.
Directions
1) Preheat oven to 350 degrees. Butter a 9x13 pan.
2) Brown ground beef, ground pork, onion and garlic until no pink remains.
3) Drain any fat.
4) Add tomato sauce, tomato soup, canned tomatoes,tomato paste, dill, parsley and bay leaf.
5) Simmer covered 10 minutes. Remove bay leaf and stir in rice.
6) Meanwhile, heat olive oil over medium heat.
7) Add cabbage and cook until tender crisp.
8)Place half of the cabbage in the pan.
9) Top with half of the beef/rice mixture.
10) Repeat layers ending with beef/rice.
11) Bake uncovered 25-30 minutes or until hot & bubbly.
