So what can you tell us about him?

I haven't worked out the exact details, but he will of course be gluttonous, prone to eating small things often - living or non. He will also start out as a bad guy but become good later on. :3

So will he come into conflict with Sonic, or is the cast all OCs?

All OCs, however, you can always imagine him coming into contact with the Sonic characters if you wish. X3

So what will be the general plot of this whole story?

It's a bit hard to summarize it... pretty much humans work with partners such as Ero to achieve goals(the idea was actually inspired by Onmyou Taisenki, yes) that vary from humble companionship to world domination. As the story goes on, deeper meanings behind the partnerships are delved into...

More or less, the standard type of story, and Ero will be one of the main characters. :D

And that's good for you, actually... the original story was poorly drawn, poorly written, and I didn't really like the character designs... :(
