Ok...this didn't go as well as can be expected.
Bottom round cut used as "fake brisket". Dry rubbed with a Texas Brisket rub and put in the grill/smoker a wee bit too long. (A little over 2 hours for this...I think my heat got away from me a couple times.) Still nice and moist, but not the color I was going for inside.
Will be moved later.
