I've had it at the back of my mind to do a heron gryph for a few months now, and only did it the other day on a whim.
Oh my goodness...
I think I'm going to call him Stellan. He's not super big, so he sometimes struggles to get down his prey, but what he lacks in physical size and power he makes up for in over enthusiasm and stubbornness.
I did a lot of researching of heron digestive tracts, and they don't actually have crops, but .... all my gryphs have crops, because... fantasy. He also has undefined feline hindquarters that have a touch of more canine features, so this boy is a real hybrid mishmash.
Needed some prey examples so this features characters belonging to Bruyaglovae and Tupo because I needed to feed this boy. Look how skinny he is! A travesty.

Yeah, herons are actually one of the few bird families to lack crops. They make up for it with extremely distensible stomachs, one of the most in Class Aves. (And sometimes their eyes are quite literally bigger than their stomachs; it's not rare for a blue heron to bite off more than they can swallow and choke to death trying to get prey down).
No reason why your gryphon can't have a crop or storage pouch "installed" though. As you said, it's fantasy, so anything goes!

Yep. It's a good question as to why, but it's thought that because of their diet they don't really need to store food like many birds of prey - they tend to eat large numbers of small items. Easier to just digest them immediately and store them as body tissue than store them in an unneeded crop. (Owls are another bird species that has no crop and has similar dietary habits).
In a vore scene, though, the crop is at least (marginally) more habitable than a stomach, though. There's often a little air in there and it doesn't digest food. Probably why people want to head there. ^.^
