
Made dinner last night. Doubled some ingredients so it could last 2-3 days. What I doubled will be told next to the item I doubled.
Ingredients
1 1/2 pounds bologna Sausage( I actually used some Eddy's fully cooked smoked sausage already. Didn't make a difference)
1 package (18 oz) mixed vegetables( I used two 12 oz bags)
2 apples, peeled and cut into wedges( I used 3 small, red apples)
1 tablespoon butter or margarine
Dash of black pepper
1 cup tomato juice( I used 2 cups tomato juice)
2 tablespoons ketchup(I used 4 tablespoons of ketchup)
1 teaspoon dried thyme leaves
1/3 teaspoon dried oregano leaves
Directions
1) Slice sausage and cut slices in half.
2) Saute sausage in a skillet in butter until slightly browned.
3) Add vegetables and apple wedges, sprinkle with pepper.
4)Add tomato juice mixed with ketchup.
5) Bring to a boil. Add thyme and oregano, cover with a lid.
6) Simmer over low heat for about 15 minutes or until vegetables are tender crisped.
7) Add a little more liquid if necessary.
8) Serve
