If you play Spy all the time you should be able to kill engineers fast, if Pyros weren't around Spies would be overpowered as if Spies weren't around Engineers would be overpowered.
Engineer is defense, Pyro is offense and Spy is support, three class types your arguing here. I am assuming your annoyed because you can't sap fast enough or avoid Spy-checking Pyros well enough. Besides, the difficulty to play a class doesn't equal fun to play said class.

I have basically no trouble with Engineers. The cloak and dagger makes them easy prey since you can just wait until there's nobody around to either stab n' sap, or even sap n' stab. Or if they're more heavily defended, sap, then peg 'em in the face, yay Ambassador. Pyro's rarely give me much trouble either, or at least not any more trouble than other classes. If I get seen, I'm dead. That's usually true regardless of what the enemy class in question is.
I hate Pyro and Engie, not because of their ability, but simply because of the people who play them. They're both boring classes that involve either ridiculously simplistic gameplay (w+m1) or outright turtling with very little threat of dying short of an ubercharge. Both are played almost exclusively by the kind of people who get off as their score count goes up.

They aren't boring at all, but whatever. If I wanted to play a class where the main object was the run away once exposed I'd play Spy constantly. Spy is boring for the most part because your snooping. If I wanted to snoop, I'd play Splinter Cell.
Or at least Sniper, Sniper is a whole hell lot more fun then Spy to play imo.

Again, not saying they're unbalanced.
And you're right, playing Spy is basically like playing a stealth game against a bunch of human, non-stealth opponents.
Which is why it's fucking awesome.
Pyro can be fun if you play him properly (see: ambush class AKA spyro), but really it's just like playing Spy without the tension since even if you get seen you still have a huge chance of winning.
