This reminds me of Dark Forces and their "Spend next ten minutes emptying your ammo stockpile" Rancor encounters...

I don't recall there being Rancors in Dark Forces- just Kell Dragons, one of which you'd have to punch to death. Rancors didn't show up till least Jedi Academy, and you were never supposed to shoot them to death.

Hm, maybe. My memory of these games is rather hazy, if only for the fact they all were rather blocky, pixellated and uniform brown on brown.

I mean, what made them stand out was that they took so damn long to kill, not that they were challenging in any way.

There WERE Rancors in the sequels to Dark Forces, Jedi Knight and Jedi Academy

There was a Rancor in the expansion to Dark Forces II, Mysteries of the Sith.

The Rancor in Mysteries of the Sith (love the bloodless look of the eating animation, just wish the models were better) could only be killed with the saber (or fists if you're ballsy).
The Rancor in Jedi Academy could get killed but it took forever and it respawned so I found it better to Mind Trick it while the prisoners escaped. The Mutant one later on was invincible until you crushed it, however.
