This is a vegetarian dish. Can be made vegan by leaving out the eggs. <3
1 cup uncooked brown rice.
4 green onions
¼ yellow onion
½ teaspoon minced garlic
2 eggs
1 cup Frozen peas and carrot mix.
1 cup edamame
2-3 tablespoons low sodium soy sauce.
1 tablespoon canola oil, twice
Cook rice as directed. Usually 45-50 minutes.
Chop/dice green onion and yellow onion.
Scramble both eggs until well blended.
Steam peas, carrots and edamame in microwave until cooked. Pod edamame and mix veggies
together.
Add oil to 12 inch frying pan and heat on medium heat.
Add green and yellow onions and garlic to pan, cook for 5 minutes until they start to soften.
Add beaten eggs to pan, stir well until eggs are cooked. (Looks like scrambled eggs)
Push eggs to one side of pan. Add 1 tablespoon of canola oil and let heat for 1-2 minutes.
Add cooked rice, peas, carrots, edamame and soy sauce to pan. Blend with eggs and onions.
Fry mixture for 15-20 minutes on low-medium heat.
Add soy sauce to taste at this point
