Pimpinella Saxifraga, also known as Lesser Burnet, Solidstem, or Burnet Saxifrage, is a perennial plant belonging to the Apiaceae family which includes relatives such as parsley or carrots. Pimpernel grows to approximately 20 inches high with an array of oval, serrated leaves with a wide range of variation. Similar to Queen Ann's Lace, Pimpernel sprouts miniature white flowers in small clusters. These will bloom between May and September. While native to Asia and Europe, this plant has also been introduced and naturalized in North America and New Zealand. It prefers a sunny, warm area with dry, often stony soil to grow in. Pimpernel roots consist of a sharp, bitter taste and are harvested for multiple medicinal uses. Although, the leaves will sometimes be used as well. This plant has been used in medicine for quite a long time. The Greek physician Dioscorides used it as a diuretic while Henrik Harp Strings, a Danish physician in the 1200s, used it to treat coughs as well as heart disease. It has been found that Pimpernel roots have medicinal qualities due to the roots anti-inflammatory, antispasmodic, astringent qualities. When dried, it can treat infections of the upper respiratory tract, bronchitis, sore throat, and is effective in dissolving mucus in the airways. When ingested, it aids in increasing appetite and reduce gas while root extracts can be used as a gargle to decrease inflammation in the throat or mouth. Extracts from the seeds have been used to flavor sweets or add bitter tastes to both liqueurs and medicinal products. The leaves, with a taste similar to cucumber, have been used in salads or for cocktail garnishes. Due to being it's antiseptic properties, Pimpernel was used as a mild sedative and on minor skin wounds.
