Yeah, it's quite interesting to see his evolution. In the two first seasons he basically had an antagonistic role, but when the third season started, he left that role to slowly evolve in each new episode. It's a realistic evolution, Nom Nom hasn't become in a nice guy from one day to the other. He's still angry and proud, but... he's better and tolerate the bears next to him.
Episodes in where he appears after the third seasons start: "Anger Management" (It's very tender), "Kyle" (This episode is centered in him, and even the bears don't appear in it), "The Nom Nom Show", "Vacation" (where he shout "I love you Grizz!") and "Crowbar Jones: Origins".

It's very good. I think the show is going a bit further than Futurama or the Simpsons could have. It's interesting to have a protagonist who is so 'flawed'. I don't think they could've done that on broadcast (or cable) TV. The appeal wouldn't have been broad enough. The humor is maybe a little heavy and dark but I like it.
