Mushroom, spinach, potato, and gruyere galette. I love galettes, they look so fancy but they're so lazy and then you can pick the whole thing up and cram it in your face

For the filling I diced an entire pound of baby portabello mushrooms and sautéed them in butter, then added two diced cooked baking potatoes, roughly two cups of raw baby spinach, and roughly a cup of grated gruyere. Then I added salt, pepper, granulated onion, granulated garlic, and mixed chimichurri* seasoning to taste (unfortunately can't be more specific there, since I was adding from those giant shaker containers - go slowly and test often!) Dropped as much of the filling as would fit onto dough, folded it up, brushed with beaten egg white, and baked at 375 until it looked browned (about twenty minutes.)
*if you don't have chimichurri seasoning, parsley or mixed Italian seasoning would also work - I just keep chimichurri as a kitchen staple because it's got a little red pepper and lemon oil in it! Gives your food a nice zip.

Oh man, this wuffy has GOT to make these!
Vrghr forgot about galettes! As you said, they're classy, simple, and delish! Can't beat a combination like that.
Will have to see if there's some way to work out making these for the shop without an oven. Making them at friend's houses though - that's going to be a "done thing"!

*nods* Good point! Or perhaps pre-bake at home and then finish/re-warm in the toaster oven at work. Could turn them out more quickly then. Our little toaster would likely fit two, so if this wuff could crank a pair out every 5-8 minutes or so, could keep the shop folks happy and fed. *grin*
