
This is a great alternative to traditional cranberry sauce. It's on the sweet side and makes an excellent topping for deserts such as cheesecake or a side to a cheese plate. The cranberries take on a beautiful glassy effect which make a gorgeous accent to any dish.
Credit where it's due, this recipe is originally from Simply Recipes, I've found quite a few good recipes there.
Ingredients
* 12 oz fresh cranberries
* 1 1/2 C sugar (or less if you prefer more tartness)
* 1/3 C brandy
* 1 orange for zest
Directions
1. Preheat oven to 325F.
2. Clean the cranberries and discard any gross ones. Use a vegetable peeler to peal thin strips of orange zest from the orange.
3. Mix cranberries, sugar, brandy, and orange zest in 8 inch baking dish, then bake uncovered for 1-1.5 hours, stirring every 15 minutes, until liquid is reduced to a glaze and cranberries are collapsed and glassy.
Notes
* I usually take this out of the oven while still a bit syrupy, which gels as it cools down.
