During the holiday season, this Wuff decided to pay a visit to one of his favorite sushi establishments in Colorado Springs: Kura Japanese Restaurant.
Vrghr started with a couple appetizers (a delightful seaweed salad, and rock shrimp tempura in a sweet and spicy mayo sauce) and then inquired about their menu listing for "Izakaya" creations. Basically, these are a chef's creations of "small plates", somewhat akin to "Tapas" but Japanese style.
Wuff's waitress had no idea what "Izakaya" meant, even though it was on the restaurant's website. So Vrghr asked whether they did "Omakase" there? (This, roughly translated, means "I put myself in your hands." And the sushi chef offers the patron a selection of sushi creations of the chef's choice. Normally ranging from a mild start to more creative and strongly-flavored as things progress. But you never really know what you're going to get, or how much it will ultimately cost!)
Once again, waitress gave wuff a blank look. HOWEVER, the sushi chef across the bar where Vrghr was seated chimed up at that point. He mentioned that Izakaya and Omakase were pretty much reserved for the evening meals; the luncheon was more geared to quick and less expensive plates, to get patrons out and back to work instead of spending longer hours in the restaurant.
Vrghr nodded his understanding, and ordered an a-la cart selection of Nigiri sushi off their luncheon (highly discounted) menu. The resulting delightful and very delicious presentation is pictured in the top image.
While Vrghr was enthusiastically enjoying that, the sushi chef who has spoken up earlier handed Vrghr the lovely plate pictured in the second image! Though not normally a feature of their lunch menu, he had created an Izakaya special dish for the wuff! This was a fantastic assortment of different types of sashimi, artfully encased in cucumber 'boxes' and presented beautifully! It was SOOOO good!
Wuff handed the chef a special tip to express his gratitude and delight. Later, as the chef was getting off shift and heading home, he offered this wuff yet another surprise - the final dessert dish pictured at the bottom. A simple dish of sliced orange segments with whipped cream and edible flower petals, with a sweet sauce swirl.
The perfect light ending to an utterly delicious lunch!

You have Vrghr's sincere sympathies - to be without access to decent sushi in a reasonable driving area! *shudders* So very sad! Wuff can't afford to eat it often, but would be horrible to be deprived from the opportunity entirely!
Wuff would happily escort you to a local sushi place were we to bump into each other at a convention somewhere. Vrghr's sure many other furs would do likewise, as sushi seems to be very popular among the furry community!
And there are quite a few versions of sushi available for even those folks who get a little hesitant at the idea of partaking of raw fish. For example, most versions of California Roll are made with no raw fishies at all! Just fresh veggies and Krab salad in most. And there are little "nigiri" style sushi with the fish on top of rice portions, made with lightly seasoned and cooked Shrimp. Easily addressable for those willing to try a shrimp cocktail at their local seafood house. Others include selections with fake 'krab' portions (already cooked), and fried egg like a slightly sweet omelet.
All those are good options to try, just to see if you enjoy the style and concepts before venturing on to more "fishie" selections.

I make my own often enough, when I'm in the mood. My youngster is very deft at making onigiri, and I make a mean asian style omelet. I always thought that it was sushimi that was the raw fish and sushi sometimes contained sushimi. I love using Tasmanian smoked salmon, seasoned sushi rice, wafer thin carrot, wafer thin cucumber all rolled up in nori. Usually with soy sauce and pickled ginger on the side. *hugs*

Sashimi is definitely the raw fish. Sushi, technically, refers to the seasoned rice. Nigiri is the type of sushi with the raw fish on top of the rice portion. There are a LOT of other sorts too, all with interesting names. Including bowls, little "hand roll" cones that look a bit like seaweed ice-cream cones, and many more.
It's definitely a tasty and artful cuisine!

And with a bit of knife-skill, easily create-able by home cooks too! The "tricky" part would be to leave a portion of the orange rind intact, to form a ring or cup to set the orange segments on top of.
To create this version, Wuff would use one of those small tangerine "cuties" type oranges that are so popular around the holidays.
Depending on your market, finding the edible flower blossoms could be a bit challenging, but you could always substitute a few flakes of dried lavender instead. And you can find that on Amazon delivery if the market hasn't got some. Or, in the right season (when available), a few jewel-like Pomegranate seeds would make a nice presentation on the whipped cream.
If you didn't want to trouble yourself making the sweet sauce swirl, wuffy suggests just using a little drizzle of Caramel or Butterscotch ice cream topping!
You could also use this same concept for other, similar fruits, like Kiwi, Blood Orange, star fruit, etc. Basically, anything firm enough to hold shape, without big seeds or pits, would work here!

I think I'll leave the fancy knife work to others. XD My fine motor skills are not the best, and I sometimes have trouble slicing bread straight.
