That's right folks, it's strawberry season down here. Now, I don't much like raw strawberries, but I like strawberry shortcake.

So . . .

Strawberry-wine Compote

Ingredients (serves 2-4)

1 pint strawberries, hulled and cut up
Sugar, up to 1/2 cup or to taste
2 tablespoons honey
1 Cup of Glühwein. Glühwein is a German beverage you can get at liquor stores over the Christmas holidays. It's red wine mixed with spices and flavorings, and is supposed to be served heated up. A decent red wine can sub for it, along with cinnamon, clove and nutmeg (all to taste; you do you, okay?).

Throw all the ingredients into a saucepan and stir until the sugar's dissolved.
Bring it to a boil and stir while the sauce reduces. Let it reduce by 2/3 while you stir so that it won't stick and burn. The berries will release their natural pectins and the sauce will get a bit thicker.

Assembly:
Place a shortcake of sponge dessert shell in a bowl.
Place a nice scoop of vanilla ice cream on the shell.
Pour some of the hot compote over the ice cream (you can reheat the compote in the microwave - yes, don't judge me).
