Well in my story the Knights Constantine are professional hunters. Every year the King and his military orders would hold large a ceremonial hunt in the capital city where captive wild creaturesthroughout the kingdom would be released in a penned environment and absolutely slaughtered to show the populace the divine glory and power of the king-based on the Assyrian lion hunts: http://etc.ancient.eu/photos/assyri.....ritish-museum/ .
After news of the infamous dragon of Stanton spread to the capital, the Royal forces have been ordered to capture it alive so that the King can have a "guest" of honor at the next hunt. Several misadventures later, a company of two dozen knights ambush the forester and dragon as they are crossing a fen, preventing the dragon from flying off before they are able to impale it. However like most knights they are haughty and arrogant and certainly willing to plunge right after their quarry, relying on their skill and numbers to carry the day... https://en.wikipedia.org/wiki/Battl....._Durbe#Battle.
I've tried to keep my story as grounded as possible. Yes, it would be bloody, but I think for knights it'd probably be equivalent to a facing a (very) large bear (that can fly and breathe fire): https://www.europeana.eu/portal/en/.....126265209.html . Difficult, but doable, and certainly a feat worthy of high nobility. Certainly nothing a dozen or two riders on horseback and in mail armor couldn't take care of. My budget wouldn't allow for a dozen knights though, much less two :P.
