I've depicted Hoffman as a sable burmese dumbo. Thats what he is to me, when I see him.

He did have top-ears at one point, but didn't seem to fit as well.

I find burmese rats interesting, they're one of the few varieties I've never owned.
A sable burmese is a darker brown than the regular.

Basically, in very simplified terms, they're a siamese rat but the usual cream colour is brown instead.
The 'points' on a burmese, or siamese, are supposed to be on the face, the wrists, the base of the tail (going up across the lower back sometimes)and on the ears and paws a bit.
So he's kinda accurate, save the excessive shading down his back, which is just something I liked the look of.
