Ugh, scariest moment in any sort of zombie setting: Someone dies, whether by zombie or normal means, like a gunshot or knife wound; but then suddenly come back as a zombie, kicking and screaming.
But also, the most heart racing moment is right in this pic. The sheer effort of trying to keep an infected individual back, practically using all one's strength just to hold the turned person back and avoid getting bitten.

Uh... Rabies IS a virus and it would technically do something like this to any animal, humans included. If this is a nighthowler epidemic (ala the comic Judy Is Dead) then it could be cured. However, that just means Nick wouldn't become infected as he gets mauled to death. However, I get what you're going for. Zombie virus.
There was a comic done with Judy being a vampire. It had a happy ending, as Nick was apparently hallucinating according to the description, but in this case... Just shoot her, Nick. Shoot her twice in the head. You don't want to see her like this, and she would not want to be like this. She isn't the Carrots you once knew and loved, she is gone now. Either you put down her corpse, or she'll turn you into an unfeeling, unloving, savage zombie like her!
