Vrghr loves his burgers at the medium rare stage. Sadly, a lot of places adhere to the "save serve" rules which require ground beef to be cooked a lot more than that. Wuff has a couple of diners that will make them Vrghr's way, but wuff has to specify he understands the risks, and the owners of both places know wuff is a constant customer, so they cut him some slack.
This is one place where the Sous Vide really shines! Want your burgers in the rare to medium ranges? Just set the water temperature to the 'center cooked' temp desired, bag up the patties, and put them in the water bath for an hour or so. Use the time to make up the side dishes and slice condiments like the tomatoes and onions, and fry up the bacon. Then just take out the heated patties and plop them on a screaming hot grill just long enough to get a nice crusty, charcoal-scented sear on both sides. And viola! Food-safe burgers at any desired temperature!
This is also great if you have a big party and want to be able to serve up burgers on demand with out guest waiting 15 minutes or more per order. Make up a batch of patties in the sous vide, and give 'em a quick sear when a guest wants one. You can have it fresh off the grill in less than 5 minutes, and feed a hungry crowd in no time!
