Brewery: Abbaye St.- Remy, Brassiere de Rochefort
Name: Trappistes Rochefort 6
Style: Belgian Dubbel
Origin: Belgium
Bottle: 11.2oz
ABV: 7.5%
Appearance: a sort of deep prescription medicine bottle amber.
Pours: The head lathers up quickly so care must be taken.
Smell: Old, dark honey over sweet, mellow apples and a touch of berries
Taste: the honey note is still there but severely overridden by the almost bitter sharp carbonation. Don’t let the words ‘severely’ and ‘bitter’ turn you off though. At first swallow the thousands of thought fragments in my mind all stopped and said “Woah! What was that!?...h-holy! Oh my Gods! Again! Again!”. I know I usually pair an ale with recommend style of music or musician but... hm...maybe some joyful powerful sweeping opera(?) but, really, just go out to a quiet park and enjoy the sounds of nature.
Mouthfeel: That excessive carbonation makes a million prickles dance in frenzied excitement all through your mouth like super excited electrons. The liquid itself is like a nectar to be savored for a few moments before swallowing. Between the two this is not a beer to be slammed but to be savored with a smile.
Rating: 9.3 A blissfully calming dubbel, just keep the carbonation in mind. Right now, all is right in my world. Except that, I’m down to a 1/5 of a 25cl glass and I don’t want it to run out, but zo is het leven.
