http://www.furaffinity.net/view/4036067/ It's winter in the land down under so it's soup season for us. This dish is a hot version of the popular vichyssoise that is served cold.
Leek and Potato Soup (with Bacon)
Ingredients:
2 large leeks
2 large potatoes or 4 medium sized
1 clove of garlic or ½ teaspoon or dried (optional)
Salt and pepper to taste
2 rashers of bacon
125g butter
9 cups of water (or ready made beef or chicken stock)
5 stock cubes (chicken, beef or veg)
1 cup milk or cream
Parsley sprigs to garnish
Nb: Vegetarian’s omit the bacon, use veg stock and if vegan use soy milk.
Method:
1. Wash leeks thoroughly then slice into quarters longways and chop into small pieces.
2. Remove rind and dice bacon.
3. Melt butter in large saucepan on a low heat.
4. Add leeks, garlic and bacon to saucepan, stir regularly to wilt and cook the leeks through; do not brown. This takes about 10 -15 minutes.
5. Peel and dice potatoes while leeks and bacon are cooking.
6. Add approximately 1 teaspoon of pepper and 1 tea spoon of salt to the leeks.
7. Add in diced potatoes.
8. Mix stock cubes up with one cup of water to make stock.
9. Cover leeks and potatoes with the cup of stock plus 8 cups of water (or 9 cups of the ready made stock).
10. Stir well.
11. Allow to simmer stirring now and then until potatoes are soft.
12. Let cool a little and then blend.
13. Just before serving, pour the milk / cream into the soup and stir well. If you plan to freeze some of the soup, don't add the milk / cream to the pan, instead add three tablespoons of milk / cream to each soup bowl.
14. If you have parsley sprigs, be a show off and add a sprig to each bowl!
