Appearance: a dark rustic brownish orange like the dimly lit background of a Dutch Renaissance still life.
Pours: much in the manner of Rochefort 6 care must be taken.
Smell: cherries, plums, kosher wine, and grains(I nice little blend of wheat and barley)
Taste: my first impulse on my first swallow was to run and get some chocolate. And yes, with the few pieces I’ve had so far this beer seems to be almost made with chocolate in mind. So find yourself a box, crack open a number 8, sit back in an old leather chair and enjoy some baroque ensembles.
Mouthfeel: The carbonation on this is greatly subdued compared to the number six but definitely still there. The alcohol is notable to but plays very well with the other flavors and graciously slides on by. All in all it’s much more mellowed and relaxed.
A thickness seems to concentrate on the tongue after swallowing.
Rating: 8.7 A good ale to be sure, but it doesn’t have that ‘all is right with the world’ vibe of the number six. It already knows all is right with the world and feels no need to prove it. It will just sit there gently smiling and wait patiently for you to come to come to the same realization. In the meantime, while we wait, have yourself another piece of chocolate.
