Mini Muffins
Basic Recipe Base
Ingredients
1 Cup Self Raising Flour (can be half wholemeal and half white)
1 Tablespoon Oil
1/3 Cup Milk
1 Egg
Method
1. Mix dry ingredients then add wet ingredients
2. Add in your choice of flavours (see variations below)
3. Mix only as long as it takes to moisten and just combine.
4. Soon into muffin pans
5. Grease or Spray Muffin Tray or use paper cases in the tray.
6. Bake at 200º Celsius (390º Fahrenheit) for 15 minutes if using mini muffin tray (or 20 minutes for larger muffins)
Makes approximately 24 mini muffins or 12 large
Other Variations (Pictured)
The variations are as endless as your imagination.
Savoury Muffins: Add
2 Spring Onions (finely chopped)
1 Roma Tomato (seeded and flesh finely chopped)
1-2 Rashers of Bacon (finely chopped)
½ Teaspoon of Mixed Salt and Pepper
Sweet Muffins: Add
1-2 Teaspoons of Sugar
1 Apple (Peeled and finely chopped)
8 Pieces of Crystallised Ginger (soaked in boiling water for 30 min prior to use and chopped very finely) Note: Don’t waste the soaking water drink it as the ginger water is good for you and tastes nice.
Other Variations (Not Pictured)
Pumpkin Muffins: Add
1/3 Cup Cooked Pumpkin (chopped or mashed)
1/4 Teaspoon of Mixed Spice
Bacon and Cheese: Add
1/3 cup grated cheese
1-2 Rashers of Bacon (finely chopped)
½ Teaspoon of Mixed Salt and Pepper
Cheese and Chives: Add
1/3 Cup grated cheese
1 Tablespoon chopped chives
Tomato and Zucchini: Add
1/3 Cup Zucchini (Chopped fine)
1 Roma Tomato (seeded and flesh finely chopped)
½ Teaspoon of Mixed Salt and Pepper
Cheese and Herbs: Add
1 Cup Grated Cheese
1 Tablespoon Mixed Dry Herbs or equivalent fresh herbs
½ Teaspoon of Mixed Salt and Pepper
Orange and Ginger: Add
Juice of 1 Orange, (Important: reduce the quantity of milk by the equal amount of orange juice or mix will be too wet. EG: if you get ¼ cup of orange juice take away ¼ cup milk)
Finely Grated Rind (Zest) of 1 Orange
8 Pieces of Crystallised Ginger (soaked in boiling water for 30 min prior to use and chopped very finely) Note: Don’t waste the soaking water drink it as the ginger water is good for you and tastes nice.

Lemon and Ginger: See Orange and Ginger but replace Orange with Lemon.
Carrot and Ginger: Add
1 Small Grated Carrot about 1/3 Cup of Carrot

Carrot and Orange: Add
1 Small Grated Carrot about 1/3 Cup of Carrot

1-2 Teaspoons of Sugar (Optional) or use Honey
