Okay first time I've made this ever and I learned from my mistakes. Mistake #1, I didn't have a spiralizer to spiralize the sweet potatoes so I just roughed it so to speak and used a cheese grater to make the "noodles" and it just didn't work. Probably should've used a knife instead. In any case, it turned out well regardless if the "sweet potato noodles" weren't exactly noodles and looked more like garnish. Hence they look like little shred of carrots, anyways, onto the recipe.
Ingredients:
2 medium sized sweet potatoes
1 pound ground beef
1.5 cups black beans, cooked
1 cup red onion, chopped
1 packet taco seasoning
1/2–3/4 cup water
Extra virgin olive oil
salt and pepper to taste
avocado or Greek yogurt to top(optional)
Directions:
1)Place a skillet over medium heat, and brown ground beef until completely cooked.
2)Add taco seasoning, black beans, red onion and water to the skillet.
3) Mix together and simmer on low for 5 minutes.
4) While ground beef is cooking, spiralize sweet potatoes.
5)For crispier sweet potato noodle bowls: Preheat oven to 425 degrees while ground beef is cooking. Toss noodles in just a swirl of extra virgin olive oil salt and pepper to taste, and cook on a baking sheet for 12 minutes. Broil on high additional 3 minutes or so.
6) For softer sweet potato noodle bowls: After simmering ground beef with taco seasoning, add sweet potato noodles to the same skillet with a swirl of EVOO(extra virgin olive oil) and another 1/4 cup water. Cook on low about 7–10 minutes until sweet potato noodles are soft.
7) Serve
To clarify after step 4, choose the style of how you want your "noodles" to be(cripsy or soft) and follow the instructions for that and then add to the "bowl"(essentially add to your ground beef mixture).
