An old fashioned desert that makes many people groan but as my family do not like sultanas I came up with this variant that is mega yummy. It can be served on its own or with ice cream, custard or cream. It's even nice the next day sliced like a cake and eaten cold. I do hope some of you try it out.
Bread and Butter Pudding with Mixed Berries
Ingredients
8-9 slices of white bread, buttered and each slice cut into 4 triangles
½ or 1 cup of fresh or frozen berries whatever is in season
(I used a frozen mix of mulberries, blackberries, raspberries and blue berries because its winter in Australia)
2 cups skim milk
5 eggs
5 tbspns sugar
Cinnamon
Vanilla essence
Lightly greased baking dish
Method
This is dish done using layering
Carefully in the lightly greased baking dish do a layer of buttered bread overlapping each small triangle carefully.
On top of this spread the mixed fruit, sprinkle with 1-2 tablespoons of sugar and a generous amount of cinnamon.
Make sure to cover all the fruit with the second layer of buttered bread.
If you have a deeper baking dish then a third layer can be added but use only ½ the fruit between layers.
Cover with 1-2 tablespoons of sugar and a generous amount of cinnamon.
Lightly beat milk, eggs, 1 tablespoon sugar and vanilla essence together.
Pour mix over the layered fruit and bread.
Press the bread down gently don’t worry if it all won’t go under the milk mix as the top will be crunchy.
Allow to sit 30 to 60 minutes.
Sprinkle remaining sugar and a generous amount of cinnamon over the top.
Bake at 160ºC for 40 -50 minutes until the pudding is set and the top crispy.
(I had to cook mine for 65 minutes because my oven was playing up.)
Serve hot on its own, with ice-cream or cream alternately serve cold
Alternatives
Traditionally sultanas were used as the main fruit
Try replacing the mixed berries with diced apples and or pears
Try replacing the mixed berries with broken up banana and use a little honey instead of sugar except for the topping.
Use demerara sugar instead of normal white sugar for the topping
For an interesting twist try putting some broken up lavender flowers in with the fruit.
For a healthier alternative try ½ white bread and ½ wholemeal
