If that were the case, he would have been born as a Fallen Angel. As made evident by the pages which describe the various races, and how cross breeding between Demons and Angels work.

What could it be?

It could be that Jonty's contractor is a friend of Tornwing and to keep Jonty safe while allowing him to make a choise.Said friend did the contract in such a way so Jonty could eather learn humility or give powers to keep him safe from something that could have happened to Jonty's parents.

So nice and peaceful.. finally, after so much stress and aggression... And Jonty with such a fine manners, how lovely~

I'm feeling it's only temporary and the storm is yet coming though... especially with us knowing how much power the person who 'gave' the contract has over their contractor, how much power they have over them... and we have no idea what sort of plans or goals he, the overseer of Jonty, may possible have.
Also, I have some pretty interesting ideas/scenarios building in my head about 'alternate path' of how their adventures could've possibly go if... 'if'... if something specific has happened that I have on mind but I won't say it here heh.
