Appearance: a thick pale beige head with a deep, near impenetrable brown hue like dark stained oak. Hints of orange can be seen at the edges. Particulates are at the bottom.
Pours: Even with care half my mug was quickly foam.
Smell: like Marcel Proust and his tea biscuits, this has an aroma of a delightfully tantalizing and warm memories inducing Christmas pudding, made with drunken raisins and a sharp molasses. The biscuits he dipped in his tea that is. I have no idea what Proust smelled like. You just smell it and all these warm memories come flooding back.
Taste: A medley of roasted nuts and chocolate covered berries. And, some umami aspect that is working with the alcohol to bridge the gap between nuts and chocolate berries. The Stevie Nicks albums* I’m listening to right now are actually working quite well.
Mouthfeel: crisp and mellow-sweet at the same time. It comes in sharp, then the more mellow aspects twist around in a vortex and give a refreshing yet relaxing swallow.
Rating: 9.27 I’ve had one of those rush around irritated half the time twice the tasks sort of days. This ale reminded me to relax, ground, and center myself. You cannot make life happen faster. Tearing open the rosebud is not how you make it bloom. This is a friend in humble clothes ready to hug and going “Sh-sh, hey, I understand. Would you like to talk about it?”.
Many ales either they mask the alcohol or it’s harshly noticeable. Here they’ve masterfully worked with it to make it another instrument in this Dubbel’s taste profile, and it loses nothing over the period of time I’m imbibing it other than the carbonation.
