
As time runs down at the AirBnB, prior to wuffy heading to the Con Hotel in Orlando, wuff wanted to clean out the pantry. Not much left: A can of Bacon Spam, an onion, 2 potatoes, and some Red Bell Pepper.
Sounds like its time for Hash!!
And a very nice hash it turned out to be! Easy to create, and VERY inexpensive! The canned Spam was about $2.50. All the rest would total up to about the same. So you could create 2-4 servings, depending on how hungry you are, for right around $5 with this.
Wuff "dressed up" the Spam by first dicing and frying it up to get some crispy edges, then adding in a wee bit of Teriyaki sauce and reducing that down to a thick coating. While the Spam was frying, wuff put the diced potatoes into a little pot with some salted water, and boiled until they were tender byt not in the "mashed potato" softness yet. Wuff set the prepared Spam off and then wiped out the fry pan and tossed in some butter. When it browned, wuff added the onions and bell peppers. Fried those for a minute, then poured in the drained boiled potatoes.
Everything fried until the onions and bell peppers were done and the potatoes had some crispy edges. A bit of minced garlic kicked the flavors up about a minute before wuff added the prepared Spam to the rest. Let it all cook together for a few more minutes for the flavors to get to know one another.
And serve it up steaming and ready to eat!
Lovely dish! Salty-savory, a touch of sweetness from the onion and teriyaki, nice contrast with the bell pepper, and great flavors all around. And you wouldn't know that was Spam if wuff hadn't told ya! *grin* The bell pepper even added some nice color.
Wuff is very likely to make this one again soon! YUM!
INGREDIENTS:
1 can Spam (Vrghr used Bacon flavor version)
2 Med Red Potatoes (about 1.5 lb), med dice (Can use Russet, but the waxy reds have better structure)
1 med onion, small dice
1/3 Red Bell Pepper, small dice
2 tsp Minced Garlic
3 TBS Teriyaki Sauce
3 TBS Butter, divided
INSTRUCTIONS
Dice the potatoes to medium-small dice. Boil in salted water until they start getting tender, but aren’t in “mashable” condition (will be frying next). Drain and allow to sit in colander until ready to add to veggies, to allow them to dry out a bit.
Cut the onion into very small dice, and slice the portion of bell pepper into small dice.
Remove the Spam from the can and cut into medium dice.
In a medium skillet, add 1 TBS of butter and let heat until foaming subsides. Fry the Spam to get a bit of crispy edges, (about 2-3 minutes). Add the Teriyaki sauce and continue frying until most of the Teriyaki is gone and very thick coating on the meat remains to give it some individual Teriyaki flavor. Do not over-cook as the Spam will be added to the veggies next. Remove the Spam and hold for veggies.
Rinse and wipe out skillet and return to heat.
Heat 2 TBS of butter until it browns slightly around the edges.
Add the veggies and fry until the peppers are tender and onions translucent. Add the potatoes and spread out in the skillet and fry on one side until the edges start to crisp. Flip and fry the other sides.
About halfway to done on the second side frying, add the minced garlic. Stir to distribute. Allow to continue frying until the garlic is fragrant, but not browned (turns bitter).
Add the prepared Spam into the rest of the veggies. Stir to combine. Allow to fry a bit for the flavors to meld and the edges of the spam to crisp a little more, stirring occasionally.
Plate up and Serve warm

By the way, if you top a plate of this with a nice, runny fried egg, it would be AMAZING!!

This puts me right in the mood for a hash my mother used to make with the leftovers from a boiled dinner. Bits of ham, potatoes, carrots, cabbage... mixed with salt, pepper, and mustard... fried up in the electric skillet... it was like heaven on a plate.
