heh this hit home for me, one at a pizzeria I work at we got a batch of EVIL DEVIL ONIONS . Before them I never had a problem with onions, never shed a tear, I don't know what dimension these evil vegs came from but NOBODY in the place could chop them. Everybody eyes full of tears, no FLOODED with tears. Manager came in saw the third finished batch, everyone told him they couldn't handle the onions, She just walked up chopped the whole batch in less than five minutes no tears, did the boss walk for the rest of the day.

i use a blender, faster, and it gets all those tear making juice in the iar in just a few seconds >_>

Gordon Ramsay has a video on the proper technique. The vertical pre-cuts really do minimize the problem. The horizontal pre-cuts are an excellent way to slice your own goddamn finger.

if you don't cut into the root the onion won't hurt you!

otherwise, having water runing close by will help too.

TIP! The fumes from the onion react with tears to form a very very mild acid. THat's why it burns your eyes. If you blink rapidly, you'll add more tears and dilute the acid to the point it's neutralized.

By the way , if anyone is wondering why cutting onions causes eyes to water is because when cut a bit of vapour is released by the onion. Containing traces of sulphur.

Sulphur + Water = Acid. (Rinsing out eyes would help pretty well ,or making the vapour isnt flowing directly into your face)

Actually it's not sulfur that does it. It's a sulfur compound called syn-propanethial-S-oxide, and it's made as a result of an acid reaction with amino-acids in the onion when the cells are damaged.

It's similar to Phenacyl Chloride(tear gas).

The chemical in onions that causes your eyes to burn is not an acid. It's a naturally occurring volatile sulfur compound that is similar to Tear Gas used in riot-control and warfare. The proper way to prevent your eyes from burning while cutting onions is to have your knife properly sharpened.

I dont know how, but onions have never bothered me, and I dont even cut them fast.. perhaps its the type of onion.. but I see that the struggle is very real for others. My heart goes out to you guys.

They say onion sensitivity is a sign that the sugar levels in your system are too high. And I tend to believe it, because since I cut back on my sugar consumption onions don't bother me as much.

Alternatively, if you light a candle while you're chopping onions, that helps too.

A Mexican former girlfriend and her sister always told me, "Don't cut the tear ducts of the onion!"

Well I still have no idea what they meant, so I hold the onion under a trickle from the faucet, cut out the root end and the shoot end in little cones and rinse out the craters. No problem!

Cold, crisp, rinsed onions before the cutting. Ice water soak them before the slicing.

I have an exhaust fan over my stove, and I usually chop onions right next to the stove, so I rarely have that problem

Having a good knife helps, otherwise you're just crushing some of the onion and getting the juice everywhere. The sharper the better.

I'm somewhere in between; a lot of onions don't bother me; but sometimes you get one that really gets you to tears; but dude I cut up so many onions, I don't need to see to mince. it almost doesn't even slow me down, [that's without trying to dice at the speed of light either.]
