Tuna Noodle Spaghetti
Another of the many dishes wuff made for a friend this weekend.
This was one of Vrghr's "go to" dishes when wuff was a younger cub. Just a quick, "throw a couple cans in a pot" and done. Cheap and took no skill, but made a decent meal.
Wuffy kicked this one up a little, but still holds very true to its "bachelor cooking" roots. Creamy, easy, and tasty. And a pretty low skill hurdle to create. Wuff's addition of crimini mushrooms, mushroom soup base, and a touch of cream really kick this one up!
Give it a try! If you enjoy tuna, you'll likely enjoy this option.
Makes 4-6 servings.
INGREDIENTS:
1 pkg (16 oz) Spaghetti
2 cans (6 oz) Tuna in water
1 can Cream of Mushroom Soup w/Roasted Garlic (any cream of mushroom soup would work)
8 oz sliced Crimini (brown) Mushrooms
2 tsp Better Than Bullion Mushroom Base
2 tsp Minced Garlic
1 TBS Butter
1/2 soup can 2% Milk
1/3 soup can Heavy Cream
Large pot of well-salted water + 1 TBS Garlic Powder
INSTRUCTIONS:
Bring a large pot of well-salted water to a boil and add 1 TBS garlic powder to help season the spaghetti. Add the spaghetti and cook until al dente
In a large pot, melt the butter until foamy and add the minced garlic and sliced crimini mushrooms. Saute until the mushrooms have begun to give up their liquid
Add the can of condensed cream of mushroom soup. Stir until the soup begins to melt down a bit. Add the mushroom stock base concentrate and stir into the hot soup base until it combines
Fill the soup can about 1/2 full of 2% milk. Add heavy cream until the can is 2/3-3/4 full. Pour into the pot and stir to combine everything.
Add the canned tuna with the packing water. Stir together and break up any large lumps of tuna. Allow to simmer together for 3-4 minutes for flavors to combine
When spaghetti is cooked, reserve about 2 C of the pasta water and drain off the rest. Do not rinse!
Add the drained spaghetti noodles to the pan of sauce. Stir to combine and coat everything. If the sauce is a bit too thick, add some of the pasta water. It will emulsify and give a nice glisten along with thinning the sauce out some
Plate onto some warmed plates. If desired, garnish with a bit of chopped fresh parsley. Side with some buttery garlic bread.
