LOVE these! and you can make just potato-pure Hashies also, but here is a recipe for smashy ones!

=Ingredients==
•Potatoes, 2+* (Different kinds cook differently, Kennebecs were the ones used here I think)
•Eggs 1-2 (depending how many you are planning on making)
•Salt & Pepper + other Spices (to taste)
•Carrots 1-2
•Cooking Oil
Any/or any other light other vegetable infusions you might want to add into the SmashBrown mix! (things like)
•Zuccini
•Pumpkin
•Onion
•Squash
•Etc! (Experiment away!)
=Recipe Instructions==
[I Typically make both the Vegetarian and Meat version when cooking for my household, so these instructions will list out in that fashion, but can do either side only as preferred!]
—Peel and grate up your potatoes, carrot & anything else you might want in for these! (Keep in mind that the rough mix for the SmashBrown should be 2-parts potato to 1-part 'other stuffs')
—Once peeled and grated; squeeze as much of the moisture from that. (few different ways this can be done)
=Pressing handfuls of the grated vege-stuffs on the chopping board over a sink (*I prefer this method now)
=Using a clean and thin tea-towel to wring the moisture from that
In both of these, adding a bit of salt to the mix will encourage the moisture out also!
^It does take a little while to go through this process, and it's worth being patient with and getting as much out as possible!
—Once you have your Veg' gunk ready, add an egg (only two if it is a large enough amount) and any of the spices, pepper extra salt etc to taste and mix that up evenly.
—Then heat a frying pay to mid/high heat, with a generous douse of cooking oil, separate out small blobs of that and flatten then out to fry. Once golden-brown on one side, flip that over to do the same on the other side.!
—Serve up with any number of other breakfast items, or as a side to other dishes and enjoy~! ❤
