Walnut, Black Pepper and Orange Zest Couscous with Kielbasa and Spinach
You will need:
Kielbasa 13 oz package sliced 1/4”
18-20 Whole raw -washed-spinach leaves chopped and torn
1 1/2-2 tsp Black pepper
1/6 tsp orange zest
1/3 cup Chopped walnuts
Couscous 5.8 oz box (I used Near East with Roasted Garlic and Olive Oil)
Feta crumbles (to taste)
[Caveat: all ingredients not used whole prepackaged are approximations]
1. Preheat wok med. high heat
2. Make couscous according to package directions but Add orange zest into water and oil for couscous as part of package direction’s step one.
3. while you wait for the water to boil Slice the kielbasa, sauté in wok, stir frequently, but let it burn a bit so most of the slices brown (let it sit for a 30-60 seconds or so, then resume stirring). When enough slices look browned Dump kielbasa Into a bowl and set aside
4. Chop and tear washed spinach. Put in a bowl with walnuts and black pepper.
put spinach and walnuts into wok, stir frequently for 1 minute(count to twenty -not seconds, just count- while stirring, let it rest and count five-ten count then resume stirring for twenty)
Put spinach into a bowl, set aside
5. Couscous should be done by now, stir in sausage, then stir in spinach
6. Plate and top with feta. Plate and serve.
Okay, didn’t have feta like I thought, subbed parmesan-romano sprinkles instead.
