As far as I know the original Chinese language didn't differentiate between rat/mouse and were considered the same.

You are correct. The Chinese symbol used for this year applies to all species within the greater rodent family and applies to mice, rats, shrews, voles and many others. However, in English, people consistently say 'rat' and then apply it to Oreo, thus the irritation.
