
This is a very simple, easy to make, delicious recipe. I like mine about 7.2 out of 10 on the hot scale. Good for snack or meal. Reheats very well after refrigerating.
Nerwee's Creole Jambalaya
MAKES: One Large Pot
HARDWARE: Stove, large pot, large skillet,
INGREDIENTS: 2 cans of diced tomatos (with jalapenos if you like), 2 cups of white rice, one large sausage (all beef, plz), 3 large boneless, skinless chicken breasts, 1 bag of frozen mixed veggies (I like corn,peas, lima beans, and possibly green beans), vegetable oil, red pepper, Tabasco sauce, Saltine crackers
DIRECTIONS: Start rice cooking, coat the bottom of skillet with vegetable oil, cube chicken and start cooking in skillet on medium high heat, once chicken is no longer pink but not brown add sausage in 1/4 inch coins to skillet, cook for until chicken and sausage begins to brown and add 3/4 bag of frozen veggies and cook until veggies are tender, Add cooked rice to large pot, add two cans of diced tomatoes and mix well, sprinkle red pepper very generously to pot to taste, add Tabasco sauce to pot generously until your nose starts to run, add all contents of skillet to pot and mix well. Serve on a plate with saltines and enjoy!
Too easy, drill sergeant!!! I prefer mine with saltines, but it eats just fine by itself.
I think my next recipe will be Voln's Stir Fry if I can get him to divulge his secrets. :) Enjoy!
