Decided to be a bit creative and make my own recipe with this one! Made my own alfredo sauce and it was actually pretty tail flippin good!
~RECIPE~
Alfredo ingredients:
-tsp melted butter
-2-3 cups whipping cream
-2 finely chopped garlic cloves
-Some Parmesean cheese brine (about 1 inch thick, 2 inches tall, 3 inches long)
- 1/2 tsp ground black pepper
-1 tsp Mrs. Dash Herbs & Garlic Seasoning
Alfredo Steps:
- put butter in sauce pot, put on stove medium heat
-when thick/bubbling, pour in whipping cream, bring to a soft boil (not quite rolling boiling, but bubbling)
- add chopped garlic cloves and parmesan brine, be careful to stir frequently or else parmesan will burn to pot.
- when rolling boil, add black pepper & mrs dash. Stir thoroughly to mix spices.
- bring to boil then simmer, once gets silky, set aside for use.
Dish Ingredients:
- approx 1 lb boneless & skinless chicken breast (2)
- linguine noodles.
at-home Made Alfredo Sauce
Steps:
-cut chicken breast to cubes/chunks
-in high walled pan, sear chicken until starting to brown
- in separate pot bring water to rolling boil. Add pinch of salt and then linguine noodles. Once done, take 1 cup "Liquid Gold" starch water & add to alfredo Sauce. Whisk well to emulsify and bring sauce to a light silky consistency (gives an airy and lighter taste to the sauce so it's not as greasy/heavy). Strain noodles.
-add Alfredo sauce to chicken, loosening fond off of the pan & making the colour slightly browned. Let sit for 3-5 minutes, stirring to keep from sticking to pan.
-Add Linguine to alfredo chicken mixture. Toss and fold well so each strand is coated. Remove from stove and serve. Garnish with either parsley, freshly grated parmesan or dried kale flakes.
