
Made this some time ago and wanted to share it with you all. Like honestly, I've been cooking semi-a lotish but forget to upload here or sometimes I'm so tired. Anyways, yet another recipe to enjoy.
Ingredients:
4 garlic cloves, minced
2 teaspoons ground mild chile pepper
1(14.5 oz) can diced tomatoes, undrained
1(15 oz) can hominy, rinsed and drained(color of hominy doesn't matter. I used yellow)
1 pound uncooked shrimp, peeled and deveined(I used frozen uncooked shrimp you can find in the frozen section)
1-2 tablespoons fresh oregano, chopped(optional)
Directions:
1) In a 4-5 quart pot, heat a tablespoon of vegetable oil over medium heat.
2) Add garlic and chile pepper, cooking 1-2 minutes of until fragrant; stirring frequently. Don't let the garlic brown.
3) Add tomatoes, 3 cups of water, the hominy, and 1/2 teaspoon salt.
4) Bring to a boil; reduce heat and simmer uncovered for 5 minutes.
5) Add shrimp, cooking 3-4 minutes or until shrimp is opaque.
6) Stir in fresh oregano.
7) Serve.
[b] Side note:[/u] If you can't find canned hominy or just want to use dried hominy, what you have to do is as follows: In a 3 quart pot, cover 1 cup of dry hominy with 2 inches of water. Cover and let stand overnight. Drain. Then add fresh water and bring to boiling. Reduce heat, simmering one and a half hours or until tender, draining when done. Then follow the recipe as stated.
