A classic succulent sunday favourite from the kitchens of
anakar******************************
This is something i wiped up on my day off. It's a classic among many people on cold nights and Sunday lunches... It's Pot Roast! ^_^ here is how i make mine:
Ingredients:
4-5 Lbs. beef Roast ( I used Sirloin tip roast for this )
5-10 Gourmet White potatoes (the small ones that seem like a waste of money lol )
1 lbs. Carrots (I like to use baby but you can use Large whole ones and either chip them or cut them into pieces)
4 Celery sticks Chopped roughly
26oz. Swanson Beef Stock (you can use broth as this will be cooking for a long time and the juices will mix with it)
Worcestershire Sauce to taste
minced garlic and onion (i love to use the dried variety as it is less work but fresh is always better)
Prep:
Wash all vegetables thoroughly with water and set aside. In a heavy pan or cast iron skillet brown your roast in oil on every side. Dice your Celery, and cop any carrots you wish to at this point.
Cooking:
Place a layer of the whole white potatoes at the bottom of your crock pot followed by a layer of carrots then half of the chopped celery. Add Minced onion and garlic on top of vegetables followed by the roast. Place remaining potatoes on top of roast forming a ring around the outer edge of the crock pot fill ring with remaining carrots and celery. Douse with Worcestershire Sauce to taste then top off the crock pot with the beef stock add water if needed to cover all vegetables and cook on low heat for 14 hrs. Serve directly from crock pot adding the Carrots and Potatoes as sides to the dish.

This is one of my rainy day favorites and is a low maintenance meal once it's cooking start it early and eat it for dinner... or start it before bed and eat it for lunch ^_^ either way it's a win win for all who like roast.
