Just a basic slaw mix (mainly cabbage), with a dressing that doesn't include mayonnaise. Again, something I haven't tried to make before.
1 bag cole slaw mix (cabbage, carrots, etc.)
1/3 cup canola oil
1/4 cup apple cider vinegar
1 tablespoon sugar
1 teaspoon caraway seeds
1 teaspoon black poppy seeds
1 teaspoon celery seed
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1. Crush the seeds in a mortar and pestle, or pulse once in a spice or coffee grinder.
2. Put the seeds into a glass bowl, add the sugar, salt and pepper, then whisk in the cider vinegar until the sugar dissolves.
3. Whisk in the oil.
4. Put on a pair of disposable gloves, add the slaw mix, and toss to coat.
Verdict: After overnight in the fridge, I tried some. Very not bad; a little trace of sweet and sour, but it'll pair well against the more acidic mango salsa and the barbecue sauce I made to go with the brisket.
