
This is an easy comfort food that I regularly make for my mate. I do he cheese sauce because he can’t do tomato sauce. I always make my own homemade pasta. It takes about an extra fifteen minutes of prep, a small amount of extra work for a superior texture and flavor. However, you can also use store bought pasta.
Cheese Sauce
Ingredients:
1 Tbsp Butter
1 Tbsp Flour
1 1/2 Cups Heavy Cream
1 Cup Freshly Grated Parmesan
1 Pinch Nutmeg
Salt & Pepper to taste
Melt the butter on low heat in a small saucepan. Add the flour and stir until it forms a paste. Add the cream and stir vigorously. Make sure there are no lumps. Continue stirring over medium heat until the mixture thickens and is hot, but DO NOT BOIL. Add the cheese and stir until smooth. Add the nutmeg, then season with salt and pepper to taste. Just FYI, pasta can suck flavor out of sauces. I recommend salting until the sauce alone tastes just a little too salty. Once you add the pasta, the flavor should balance out nicely.
Crispy Prosciutto:
Simply take two thin slices of prosciutto. Place them in a baking sheet and bake at 375 degrees for fifteen minutes. They will be nice and crispy.
Add two to three servings of hot pasta to the cheese sauce and toss until well mixed. Place a serving of pasta on a plate, top with crumbled crispy prosciutto and some fresh basil if you have it.
Optional Parmesan Crisps
These are a nice garnish is you have the motivation. Simply place about 2 Tbsp circles of grated Parmesan on a sheet of parchment paper on a baking sheet. Bake at 325 degrees for about 20 minutes or until they’ve stopped sizzling. Place the crisps on a cooling rack.
