Managed to cook up my Signature Steak but didn't have time for the twice-baked potato so here's a reuglar baked potato instead. Just as tasty; not as challenging.
~RECIPE~
INGREDIENTS:
-potato
-Steak (rib steak in this case)
-salt to taste
-pepper to taste
-3 cloves of garlic
-shreaded cheddar & mozza cheese
-small chunks of butter
-1 1/2 tsp Mrs. Dash original Blend
-1 stock spring onion
BAKED POTATO:
- cut potato about half deep into quarters. Microwave for 7 mins to pre bake
- Wrap in aluminum foil, place into 400F oven for 30 mins.
-chop up spring onions. put a small wedge of butter on opened potato. sprinkle with cheese & onions (also add sour cream & bacon bits if desired. I didn't have those so left them out today).
STEAK:
-sprinkle salt & pepper generously on both sides of raw steak.
-pour some olive oil into cast iron skillet, heat till can see steam from pan/too hot to hold hand above pan. (high heat vegetable oil preferred; but once again, didn't have that so used olive oil)
-lay steak away from you and let sear for 3-5 mins (depending on thickness of steak).
-flip steak and wait another 3-5 mins. Add 2 small chunks of butter & 3 popped/crushed garlic cloves. Add Mrs. Dash (normally would do Thyme & Rosemary but Momma Hudson is allergic to those so good ol' Mrs. Dash to the rescue)
-Lift and tilt pan to side, using side wall to hold sides to sear sides for 2-3 mins.
-Take off heat, place on a plate. add a Butter slice on top and cover with aluminum foil. wait 7-10 mins to rest the steak.
-cut steak cross grain diagonally into strips, plate steak fanned out with baked potato. Serve & Enjoy!
