So 3 years ago I posted a journal about a food truck venue I went to: https://www.furaffinity.net/journal/7712011/ In it, I talked about a dish called "Deep fried Chicken and Waffles on a Stick" and vowed to recreate it at some point. This was my first attempt at finally getting around to it and they came out pretty great. These drastic times call for drastically easy to make and delicious food.
What You'll Need
-vegetable oil
-one bag of frozen breaded chicken bites or chicken nuggets (32 oz)
-instant pancake mix
-syrup
-deep fryer (if you don't have a deep fryer a saucepan on the stove will do)
Step 1:
Start by thawing your chicken. It doesn't need to be 100% thawed, but try to get it at least half way to make sure it cooks all the way through.
Step 2:
Heat deep fryer (or saucepan) half-way full of oil to 350 degrees.
Step 3:
Prepare your pancake batter in a medium sized bowl. Make 2 cups worth.
Step 4:
When oil is heated, coat each piece of chicken in the pancake batter, then carefully drop into the fryer. Use your best judgement for how many to place in at a time based on the size of your fryer/saucepan. Continue to fry for 5-6 minutes until golden brown. Also try to flip each piece halfway through. I say try because flipping them is quite difficult. If flipping isn't possible, try dipping them with a knife or something to cook evenly on top.
Step 5:
After 5-6 minutes, remove from oil and place in a paper towel lined bowl to soak up some of that excess oil. Repeat process with each piece. When cooled down a bit serve with syrup for dipping and enjoy. (optional: Sprinkle with kosher salt to give it a little extra salty to the sweetness)
