1/2 of a small sweet onion
3 or 4 mushrooms
A couple of eggs

Coarsely dice up the half onion. Slice the mushrooms about 3/16 of an inch thick.
Heat the frypan add butter or oil. To check the temperature tilt pan side to side and watch how the butter or oil flows, there should be a little rippling between the hot bottom layer of oil and the cooler top layer. If there is no ripples the pan may be a bit hot.

Add the onion and mushrooms to the pan. Saute them tell the onions become translucent and the mushrooms wilt noticeably. Don't be afraid to cover the mixture to speed cooking just remember to stir them so they don't burn. Next add your eggs and scramble, seasoning to taste. I find sea salt, pepper and a dusting of ground sage works well.

I like the onions a little crunching, but you could start cooking them first a bit hotter to caramelize the sugar in them before adding the mushrooms. Doing this changes the flavors of the dish... This is another work with what you have on hand.

When done dish up and enjoy.
