I'm so excited for this! It's diced tofu covered in a sweet and tangy orange sauce -- like the sauce that normally covers orange chicken! Perfect for vegetarians, gluten-intolerant people, or just anyone who wants a little mix on the original Asian recipe! Enjoy!
P.S. - The yield was quite large. Too large for me, in fact, to eat all at once. I'd say this serves about two to three people. Three women, two men, or one vacuum in a human form.
INGREDIENTS:
Block of Extra-Firm Tofu
Gluten-Free Flour or Flour
Vegetable or Canola Oil
2 Tbsp Orange Juice
2 Tbsp Soy Sauce
5 Tbsp Sugar
5 Tbsp White Vinegar
1 Tsp Ginger [Any kind]
1 Clove Fresh Garlic OR 1 Tbsp Garlic Powder
3 Stalks Green Onions
Orange Zest [From half of an orange; Optional]
Salt [Optional]
Lemon Juice [Optional]
MATERIALS:
Non-Serrated Chef's Knife
2 Skillets
Spatula or Metal Spoon
Paper Towels
Serving Plate
Chopsticks [Optional]
COOKING:
1: Pour vegetable or canola oil into a skillet. The amount of oil you need depends on the size of the pan and the size of the tofu. The oil should almost be able to cover the tofu pieces.
2: Carefully squeeze out the majority of the water out of the extra-firm tofu. Squeezing too hard will make the tofu crumble, so be very careful! You can do this by putting two papertowels on a plate, putting the tofu on the papertowels, and put two more papertowels on top of the tofu. It'll look like a tofu sandwich, with the papertowels acting as bread. Then, gently press on the papertowels covering the tofu to squeeze the water out. You should see the water being absorbed by the papertowels. There's no real way to tell if all of the water is gone, so do this for only about a minute.
3: Using your non-serrated chef's knife, divide the tofu into desirable pieces. I cut mine into tiny pieces, as you can see in the photo. They're about 8mm wide.
4: Pour some gluten-free flour into a bowl. Then coat the tofu in the gluten-free flour, making sure to get all of the sides of the tofu covered in the flour.
5: Turn the heat on the oil to medium.
6: Very carefully, preferably with a long-handled metal spoon or spatula, slip the tofu into the hot oil. You can fill the pan with the tofu. Fry until light to medium-yellow, then remove and put on a plate of papertowels.
7: In a skillet, add 2 tbsp orange juice, 2 tbsp soy sauce, 5 tbsp sugar, 5 tbsp white vinegar, 1tsp of ginger, 1 clove fresh garlic OR 1 tbsp garlic powder, the green part of two stalks of green onions diced, and orange zest minced. Mix very well until sugar is completely dissolved.
8: Turn heat on stove to MEDIUM-HIGH, stirring constantly, until sauce sizzles profusely. Turn head to MEDIUM-LOW or MEDIUM or when the sauce doesn't sizzle as much.
9: Pour tofu bits into the skillet full of sauce and completely cover. If the tofu pieces are bigger than what is in the picture, you might want to coat the tofu in batches.
9: Garnish with your last green onion diced and put on top of white rice, if you wish. Enjoy!

COOKING SAFETY - Be VERY careful around hot oil. Hot oil can pop at any time, so never put your face directly over the pot of hot oil. Sometimes when the corndogs go into the oil, the oil pops up. Do not leave cooking equipment, such as spoons, in the hot oil. Once you are done using the hot oil, leave on a cool burner overnight. Do not dispose of hot oil immediately after use.
