You cant go wrong with either of these for lunch / dinner (this was last nights dinner to be more specific)!
Grilled Sausage:
~ Your favorite Italian snausage (mild, spicy, etc.)
~ One Weber grill
Cook on grill at 300 degrees F for 20 - 25 minutes, but don't flip them constantly - all long as you see good deep grill marks on all sides, you're good
Then put in tray to rest for 5 minutes, cover with foil + serve when ready!
The baked manicotti:
One box cannelloni shells
Your favorite pasta sauce
1 container ricotta (used 1/2 of it, have the other half saved for stuffed shells or etc)
2-3 cloves chopped garlic
good handful of white mushrooms, washed and chopped
salt + pepper
heaping teaspoon of Italian seasoning blend
~ The key to this dish is, NOT to cook the shells themselves all the way when you get them going in a large pot to boil with a good handful of salt.
Drain and cool them off in a large colander...
Mix the other ingredients in a large separate bowl (I've also seen some recipes call for an egg to be added in, but that's not really necessary)
And you can either spoon it in, or put the stuffing in a Ziploc - nip the corner - and pipe it in that way
Oil the pan with a light coating of olive oil, followed by a good amount of sauce....
Then put on your manicotti, and put on more of the sauce....you can also top with shredded parmesan...
And bake this at 350 F for 30 - 35 minutes...
Take out, let cool for a minute or two and serve with the snausage and veggie of your choice!
