
I never posted this though I should have far before. The cake I posted on the front had a "Checkerboard" strawberry and vanilla cake center. Unfortunately, as you can see from the pic, the Checkerboarding wasn't all that exact. I overfilled the rings a bit to much and when it baked they overflowed and mingled like you see here.
How it's made is using this little device that goes in a round cake pan and makes three "rings" in the cake. You fill the rings with alternating cake batter then remove it and, voila, you have rings. Then, alternate how you stack them and creates a pattern. It's quite neat, and regardless looks pretty even if it isn't perfect.

It's a strawberry cake mix, actually, and a white cake mix I used.
Yes, I used box cake mixes... why? Well, for starters, the ones available nowadays are actually really good. They also use real, cake flour (Which is low gluten) so they create better cakes than using All-purpose flour... And, well, while making a cake batter isn't hard, it's far more expensive to make it from scratch due to cost of cake flour vs. All-purpose and when you can get Buy one, get one free cake mixes it's just really cost effective. I actually have another scrap I should upload too if I can find it, it shows one of the layers from a top view and partly why it didn't turn out quite right.

It's posted up now, and yes that's true if you've got specific recipes. Now, if I want flavors or a combination that I can't find in the store, more than happy to make my own cake batter but it's going to be something really special. I admit, I'm that way with mashed potatoes... I've got this special recipe I developed that I call "Sherried Onion Mashed Potatoes" That I break out for the holidays. A lot of work, but oh so good.
Yeah, I love food too... and it shows... ::pokes himself in the belly:: My only allergy is to Shellfish, thankfully. Here though is the recipe, I'll just share it here... I don't actually have a picture despite making it many times I've never photoed it. One thing I don't do in the recipe, but if you really want to kick it up a notch (And remove a year from your life due to cholesterol) is to cook your own bacon then, once they it is done, use the bacon grease along with the butter to caramelize the onions. I've done it, once... They... I was horribly addicted to them as potatoes but, well, now I tend to skip that or not use quite as much.

Sherried Onion Mashed Potatoes ----
This is easy to do, but loaded with tons of great flavor! We'll be making today Mashed potatoes but with a serious twist to them. This makes a heavy amount, designed for thanksgiving, but you can decrease it for your own needs (Or just have lots of leftovers, nothing wrong with that!)
5lbs of potatoes (Peeled)
1/2 large sweet Onion
1 stick of butter
1/4 cup sherry
1 tsp Montreal Steak Seasoning
1/2 cup heavy cream
1/2 cup Milk
1 Tbsp Garlic Powder
4 Tbsps Bacon pieces (Divided)
1/2 cup Sour Cream
1/2 cup Cream Cheese
1 Tbsp Salt
1 8oz bag White shredded cheese
Some Fried Onions
Start by boiling salted water and boiling your potatoes until soft and tender.
Dice Onion and in medium saute pan melt butter and then add onions and steak seasoning. Cook them until caramelized, stirring often. When Onions are about done, add in sherry and rub lightly with spatula in order to deglaze the pan.
Add warm/hot Potatoes into a mixer with a paddle and start to mix, breaking them apart. Add in Onions and Butter mixture, hot, into potatoes. Then slowly mix in Cream and milk. Next add in the Sour Cream and cream cheese. Finally add in about a 1/4 cup shredded cheese, the Bacon, Garlic, and salt. Mix until nice and creamy, adding in more milk if you need to thin the mixture some.
Now take the mixture and put into a greased casserole dish. Top the top of it with a layer of cheese, bacon, Fried onions, and a very light sprinkling of Steak seasoning or a pepper blend.
To Bake, cover with foil and bake at 350 for 30 minutes, then put under the broiler for a minute or two until the top is browned and bubbly.
Then enjoy some of the best potatoes, ever!
