
Well I found this pic which shows why the Checkerboard wasn't very, checkerboard like... And I remember why not, basically, I think it's a case of an unlevel oven mixed with me being a touch sloppy... I was amused how this one looks... I need to get a level and figure out how I can adjust my oven a little bit.
And yes, I actually cut the tops off my cakes to make them level since they'd be rounded on the top otherwise. Helps when decorating.

I actually do that too, but for the inside layers I cut them flat, else you have bulges on the middle layers. I keep the cake leftovers and turn them into crumbs which can be used as outside garnish on different deserts or toppings too. The bulging, depending on how big, can make for an unsteady center mass and one may end up with a sliding cake to the side!
Cake bits in center icing is normal... Though one thing you can do to help make for perfect, outside, slices is to clean your knife after every slice. I do this especially so for Cheesecakes (I actually cut cheesecakes, one cut at a time, then I run the blade under hot running water to clean and cut the next slice. With a cake I tend to wipe off the blade with a paper towel between slices.) though it works for cakes to.
