I have two theories: One is that the carver simply made a mistake, or may have been taught incorrectly.
Two is the carver chose to reverse the S because the S is pronounced more like a Z in these words.
I might be wrong in both theories, but literacy was not very standardized at the time, and spellings/grammar seemed to be different based on background, location, etc.
