It has been a long time since i've had one of these.
Today was a great day to make them! These are pretty tasty but I need to find a way to make them less oily. Anyhow, here's the recipe ♥
Ingredients :
1 cup of Cod ( Clean, cooked, salt free and broken into small pieces)
2 cups of All purpose flour
2 teaspoons of baking powder
1 packet of Goya Seasoning - Achiote y Culantro (it adds the golden/yellow color and some flavor)
1 table spoon of Cilantro
2 cups of water
Deep fryer with vegetable oil (Or a deep pot where you can deep fry, which ever is safest for you)
Preheat oil in high heat, have a basket or large bowl with tissue paper (to absorb the oil of the cooked cod fritters)
Preparing the cod : Wash the cod and leave it in water for a day. This helps remove the excess salt it has. After doing so, boil it and break it into small pieces.
In a large bowl combine the flour, 1 packet of Goya seasoning, 2 tsp of baking powder and the Cilantro, sift it together.
Proceed to add the water and combine until smooth, then add the cod and combine well again.
With a soup spoon. Scoop up the mixture and pour into the hot oil. You will see the mixture expand kind of like funnel cake! Be sure to turn it around a few times while cooking (Use metal tongs for safety.) Cook the fritters until crunchy and golden.
