For my first turn after my family finally started getting together for weekly dinners. Apologies was not photographed until it was mostly eaten, again
What you need (in order added to pan)
2 oz cooking oil (vegetable works best)
1 tbsp ground Sichuan peppercorn
5 tbsp garlic ginger paste (or half that much each minced ginger and minced garlic)
12 oz ground pork (not sausage, just ground pork)
2 tbsp spice bean sauce
2/3 cup chicken broth
1 tsp corn starch dissolved in 1 tbsp water
2 oz hot chili oil
1lb tofu (recommend firm)
Optional (all added at end)
2 cups rice (precooked amount)
1 scallion, chopped fine
1 tsp sesame oil
1 tsp sugar
Add ground peppercorn to sprinkle
Start on medium heat, heat oil until bubbling
Add ground peppercorn, let simmer a minute
Add garlic ginger paste, mix and simmer a minute
Turn to high heat, add ground pork. Brown
Add spicy bean sauce, mix and simmer a minute
Add chicken broth, simmer two minutes
Add corn starch slurry, simmer until thickened
Add hot chili oil, mix thoroughly.
Add tofu, toss and cook 5-6 minutes.
Can serve on rice, and with sesame oil, ground peppercorn, sugar, and/or scallions added.
